Spicy Chicken with Mango Salad
This vibrant Indian dish offers a healthy and flavourful meal. Chicken breasts are coated in garam masala and pan-cooked until charred. They are served alongside a fresh salad of mango, cucumber, and red onion, topped with a zesty lime yogurt or soured cream. It's a complete meal when paired with warm naan bread, perfect for a quick dinner or lunch.
Ingredients
- 4 skinless boneless chicken breasts
- drizzle olive oil
- 1 tbsp garam masala
- 1 large ripe mango
- 1/2 cucumber
- 1/2 small red onion
- handful fresh coriander leaves
- 4 tbsp soured cream or natural yogurt
- grated zest and juice 1/2 lime
- warm naan bread to serve
Method
- Get a griddle or frying pan hot. Coat the chicken with oil, garam masala and a generous pinch of salt. Cook it for 6 minutes on each side until it is cooked through and has some char marks.
- Prepare the mango by peeling it and cutting it into thin wedges. Cut the cucumber in half lengthwise, then slice it thickly on an angle. Slice the onion thinly. Combine these salad ingredients with the coriander leaves and divide between plates.
- Combine the soured cream or yogurt with the lime zest and juice, then season it. Place a dollop next to the salad. Slice the cooked chicken diagonally into halves or thirds, arrange it with the salad and serve accompanied by warm naan bread.
