Spicy Chicken With Coconut Lime Sauce

Ingredients
- 4 chicken thighs
- 4 chicken legs, drumsticks
- 3 tablespoons peanut oil
- 1/2 cup green onion, sliced
- 1/2 cup salsa
- 1 tablespoon garlic, minced
- 2 dried red hot peppers
- 1 teaspoon curry powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (13 1/2 ounce) can coconut milk
- 1/2 cup fresh lime juice
- 3 cups rice, cooked
- 1 lime, sliced (optional)
- 1/2 cup coconut, grated
Method
- Heat the peanut oil in a large nonstick frying pan.
- Brown the chicken pieces on all sides for about 5 minutes, then take them out and set aside.
- Place the green onion, salsa, garlic, dried peppers, curry powder, salt, and pepper into the same pan and cook for about 2 minutes until the onion colours.
- Put the chicken back into the pan, pour the coconut milk and lime juice over it, and let it simmer for about 30 minutes until the chicken is tender.
- Take out and throw away the dried red peppers.
- Arrange the cooked rice on a serving platter and spoon the chicken and sauce over the top.
- Finish with lime slices and a sprinkle of grated coconut, serving any extra coconut on the side.
