Spicy Chicken Tortilla Roll-Ups
These roll-ups are a delicious appetiser featuring shredded chicken breast combined with a creamy, spiced cheese filling. The mixture is spread onto large flour tortillas, rolled tightly, and sliced into pinwheels. The recipe uses ancho chilli powder, cumin, and cayenne for a gentle heat. After assembly, they are chilled before serving, making them a convenient make-ahead option for gatherings. The recipe yields one dish suitable for eight servings.
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts
- 1 (10 ounce) can diced tomatoes, drained
- 12 ounces cream cheese, softened
- 1 cup shredded cheddar cheese or 1 cup monterey jack cheese
- 1 garlic clove, minced
- 3 teaspoons dried ancho chile powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon garlic salt (I like Lawry's)
- 1/4 cup cilantro, chopped
- 6 scallions, white and green parts, chopped
- 6 -8 large flour tortillas
Method
- Season the chicken breasts with salt, half of the cumin, and 1 tsp of the chilli powder. Place the chicken in a skillet with about 1 cup of water. Cover and cook until the chicken is cooked through, adding more water if needed. Let the chicken cool slightly, then shred it using two forks.
- Combine the softened cream cheese, drained diced tomatoes, shredded cheese, the remaining spices, minced garlic, chopped cilantro and chopped scallions in a mixing bowl. Mix these ingredients until they are well combined. Stir in the cooled, shredded chicken.
- Lay the large flour tortillas out flat. Divide the chicken and cheese mixture evenly, spreading it thinly in the centre of each tortilla while keeping the edges clean. Roll each tortilla up tightly, leaving the ends open instead of folding them in. Use a sharp knife to cut each roll into 1 inch thick slices, then place them on a serving platter. Cover the platter with plastic wrap and refrigerate the roll-ups until you are ready to serve them.
