Spicy Chicken-Tomato Soup
This hearty soup brings together tender cubes of cooked chicken with sweetcorn and a rich tomato base. Ingredients
- 2 (14 1/2 ounce) cans chicken broth
- 3 cups cubed cooked chicken
- 2 cups frozen corn
- 1 (10 3/4 ounce) can tomato puree
- 1 (10 ounce) can diced tomatoes and green chilies
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- 1 bay leaf
Method
- Place all of the listed ingredients into your slow cooker.
- Put the lid on and allow the soup to simmer for 4 hours.
- Once the cooking time is complete, take out and discard the bay leaf.
- Ladle the hot soup into bowls and accompany with your choice of crackers, corn muffins or cornbread.
