Spicy Chicken-Tomato Soup

Ingredients

  • 2 (14 1/2 ounce) cans chicken broth
  • 3 cups cubed cooked chicken
  • 2 cups frozen corn
  • 1 (10 3/4 ounce) can tomato puree
  • 1 (10 ounce) can diced tomatoes and green chilies
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 bay leaf

Method

  1. Place all of the listed ingredients into your slow cooker.
  2. Put the lid on and allow the soup to simmer for 4 hours.
  3. Once the cooking time is complete, take out and discard the bay leaf.
  4. Ladle the hot soup into bowls and accompany with your choice of crackers, corn muffins or cornbread.
