Spicy Chicken Thighs
This low-fat recipe features chicken thighs marinated in a vibrant blend of plain yogurt, hot salsa, curry powder, and cumin. The chicken is coated in the mixture and left to marinate for several hours before being baked in the oven. The result is tender, flavourful chicken with a hint of spice. Ingredients
- 4 large skinless chicken thighs (1 1/2 pounds I use boneless-skinless.)
- 1 (8 ounce) container plain low-fat yogurt
- 1/4 cup hot salsa, of your choice
- 1 tablespoon curry powder
- 1 teaspoon ground cumin
Method
- Put the chicken thighs into a glass dish.
- Mix the yogurt, salsa, curry powder, and cumin together in a separate small bowl.
- Pour this mixture over the chicken, ensuring each piece is well coated by turning them.
- Cover the dish and place it in the refrigerator for at least 6-hours, or for up to 24 hours.
- Heat your oven to 375 degrees.
- Move the chicken and all the sauce into an ovenproof dish that has been sprayed with nonstick pan spray.
- Bake without a cover for 40 to 45 minutes, until the chicken is cooked through and tender.
