Spicy Chicken Taquitos
Transform leftover cooked chicken into a delicious Mexican-inspired meal. These taquitos are filled with a spicy mixture of shredded chicken, two types of cheese, sour cream, and hot sauce, then baked until crispy. They are served with a simple, tangy dipping sauce made from sour cream and more hot pepper sauce for an extra kick. Perfect for a speedy dinner or as a party appetiser, this recipe yields eight tasty taquitos.
Ingredients
- 2 cooked skinless, boneless chicken breast halves, shredded
- 0.5 cup shredded pepper Jack cheese, divided
- 0.25 cup shredded Cheddar cheese
- 2 tablespoons sour cream
- 1 tablespoon hot pepper sauce (such as Tapatio®)
- 1 tablespoon chopped fresh cilantro
- 0.5 tablespoon crushed red pepper flakes
- 0.5 teaspoon garlic powder
- 0.5 teaspoon onion powder
- 8 (6 inch) flour tortillas
- 6 tablespoons sour cream
- 1 tablespoon hot pepper sauce (such as Tapatio®)
Method
- Set your oven to 350 degrees F (175 degrees C). Prepare a baking sheet by covering it with aluminium foil.
- In a medium bowl, mix the shredded chicken with half of the pepper Jack cheese, the Cheddar cheese, 2 tablespoons of sour cream, 1 tablespoon of hot pepper sauce, the cilantro, red pepper flakes, garlic powder, and onion powder until well combined.
- Divide the chicken filling evenly among the flour tortillas. Roll each tortilla up tightly and position them on the prepared baking sheet with the seam facing down.
- Bake in the preheated oven for 10 minutes. Carefully turn the taquitos over, sprinkle the remaining pepper Jack cheese on top, and return to the oven. Bake for about 5 more minutes, or until the cheese has melted and the taquitos are crisp.
- As the taquitos bake, prepare the dipping sauce by combining 6 tablespoons of sour cream with 1 tablespoon of hot pepper sauce in a small bowl. Serve this sauce alongside the hot taquitos.
