Spicy Chicken Taquitos

Ingredients

  • 2 cooked skinless, boneless chicken breast halves, shredded
  • 0.5 cup shredded pepper Jack cheese, divided
  • 0.25 cup shredded Cheddar cheese
  • 2 tablespoons sour cream
  • 1 tablespoon hot pepper sauce (such as Tapatio®)
  • 1 tablespoon chopped fresh cilantro
  • 0.5 tablespoon crushed red pepper flakes
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 8 (6 inch) flour tortillas
  • 6 tablespoons sour cream
  • 1 tablespoon hot pepper sauce (such as Tapatio®)

Method

  1. Set your oven to 350 degrees F (175 degrees C). Prepare a baking sheet by covering it with aluminium foil.
  2. In a medium bowl, mix the shredded chicken with half of the pepper Jack cheese, the Cheddar cheese, 2 tablespoons of sour cream, 1 tablespoon of hot pepper sauce, the cilantro, red pepper flakes, garlic powder, and onion powder until well combined.
  3. Divide the chicken filling evenly among the flour tortillas. Roll each tortilla up tightly and position them on the prepared baking sheet with the seam facing down.
  4. Bake in the preheated oven for 10 minutes. Carefully turn the taquitos over, sprinkle the remaining pepper Jack cheese on top, and return to the oven. Bake for about 5 more minutes, or until the cheese has melted and the taquitos are crisp.
  5. As the taquitos bake, prepare the dipping sauce by combining 6 tablespoons of sour cream with 1 tablespoon of hot pepper sauce in a small bowl. Serve this sauce alongside the hot taquitos.
