This Italian one dish meal combines whole wheat penne with spicy chicken sausage and a colourful mix of grilled vegetables. The dish is brought together with a creamy, lightly spiced sauce made from cream cheese, sour cream, Parmesan and smoky chipotle seasoning. Spicy Chicken Sausage Pasta

Ingredients

  • 2 low-fat spicy chicken sausage
  • 4 ounces whole wheat pasta, penne rigoti
  • 1 red pepper
  • 1 lb asparagus
  • 1/2 red onion
  • 1 teaspoon olive oil
  • 2 tablespoons light cream cheese
  • 2 tablespoons light sour cream
  • 2 tablespoons nonfat milk
  • 2 tablespoons fresh grated parmesan cheese
  • 1 teaspoon chili-garlic sauce (or to taste)
  • 1 teaspoon ground chipotle chili seasoning mix (or to taste)
  • salt
  • pepper

Method

  1. Bring a pot of salted water to a boil.
  2. Once boiling, cook the pasta for 7 minutes.
  3. Meanwhile, place the sausage in a frying pan and cook, turning it occasionally.
  4. Slice the red pepper into strips.
  5. Chop the red onion into bite sized pieces.
  6. Remove and discard the tough ends from the asparagus.
  7. Combine the red pepper, onion and asparagus in a bowl.
  8. Drizzle the vegetables with 1 tsp oil and season with salt and pepper.
  9. Toss everything to ensure the vegetables are coated.
  10. Grill or broil the vegetables until tender and slightly charred at the edges.
  11. Chop the cooked sausage and any large vegetable pieces into bite sized bits.
  12. To the frying pan, add the cream cheese, sour cream, milk, Parmesan, chilli garlic sauce and chipotle seasoning.
  13. Heat the mixture, stirring until you have a smooth, combined sauce.
  14. Return the cooked vegetables and sausage to the pan with the sauce.
  15. Add the drained pasta to the pan.
  16. Stir everything together thoroughly until well coated and the sauce reaches your preferred consistency.
  17. Dish up and serve immediately.
