Spicy Chicken Sausage Pasta
This Italian one dish meal combines whole wheat penne with spicy chicken sausage and a colourful mix of grilled vegetables. The dish is brought together with a creamy, lightly spiced sauce made from cream cheese, sour cream, Parmesan and smoky chipotle seasoning. It's a complete, satisfying pasta dinner that comes together in just 30 minutes for four servings.
Ingredients
- 2 low-fat spicy chicken sausage
- 4 ounces whole wheat pasta, penne rigoti
- 1 red pepper
- 1 lb asparagus
- 1/2 red onion
- 1 teaspoon olive oil
- 2 tablespoons light cream cheese
- 2 tablespoons light sour cream
- 2 tablespoons nonfat milk
- 2 tablespoons fresh grated parmesan cheese
- 1 teaspoon chili-garlic sauce (or to taste)
- 1 teaspoon ground chipotle chili seasoning mix (or to taste)

Method
- Bring a pot of salted water to a boil.
- Once boiling, cook the pasta for 7 minutes.
- Meanwhile, place the sausage in a frying pan and cook, turning it occasionally.
- Slice the red pepper into strips.
- Chop the red onion into bite sized pieces.
- Remove and discard the tough ends from the asparagus.
- Combine the red pepper, onion and asparagus in a bowl.
- Drizzle the vegetables with 1 tsp oil and season with salt and pepper.
- Toss everything to ensure the vegetables are coated.
- Grill or broil the vegetables until tender and slightly charred at the edges.
- Chop the cooked sausage and any large vegetable pieces into bite sized bits.
- To the frying pan, add the cream cheese, sour cream, milk, Parmesan, chilli garlic sauce and chipotle seasoning.
- Heat the mixture, stirring until you have a smooth, combined sauce.
- Return the cooked vegetables and sausage to the pan with the sauce.
- Add the drained pasta to the pan.
- Stir everything together thoroughly until well coated and the sauce reaches your preferred consistency.
- Dish up and serve immediately.
