Ingredients
- 1 teaspoon lime juice or 1 teaspoon lemon juice
- 1/2 teaspoon fish sauce
- 1 (12 inch) baguette, halved lengthwise
- 1/2 cup cucumber, thingly sliced
- 1 cup cooked chicken, thinly sliced
- 1 shallots or 2 scallions, thinly sliced
- 1 serrano chili, seeded and finely chopped (1 Tbsp)
- 2 sprigs fresh cilantro or 2 sprigs basil leaves
- 2 teaspoons reduced-fat mayonnaise (or Ginger-Miso Tofu Dressing)
Method
- Prepare the Pickled Carrot & Radish, which requires 2 hrs & 20 min.
- Mix the lime juice and fish sauce together in a small bowl.
- Place two layers of thinly sliced cucumber onto the bottom half of the baguette.
- Add a layer of the prepared Pickled Carrot & Radish.
- Arrange the thinly sliced cooked chicken over the pickled vegetables.
- Scatter the sliced shallot and finely chopped chiles over the chicken.
- Drizzle the prepared fish sauce mixture over the fillings.
- Finish with sprigs of fresh cilantro.
- Spread the reduced-fat mayonnaise onto the top half of the baguette.
- Place the top on the sandwich and cut it into two 6-inch portions.
