Spicy Chicken Salad with Broccoli

Ingredients

  • 2 broccoli heads, cut into florets
  • 2 tbsp olive oil
  • 5 shallots finely sliced
  • handful pitted black olives
  • 4 roast chicken breasts sliced
  • 4 tbsp soy sauce
  • 2 red chillies deseeded and sliced
  • 2 garlic cloves sliced

Method

  1. Steam the broccoli florets for 4 mins until just tender, then tip them into a large bowl and season. While the broccoli cooks, heat the oil in a pan and fry the sliced shallots for 2 mins.
  2. Add the sliced chillies and garlic to the pan and cook for a further 4 mins until they have softened. Remove the shallot, chilli and garlic mixture from the pan using a slotted spoon and combine it with the broccoli, olives and sliced chicken in the bowl. Pour the soy sauce into the pan to warm it, then drizzle it over the prepared salad. Serve the dish warm or cold.
