This recipe creates a robust dry rub for whole chickens, blending salt, paprika, onion powder, thyme, white pepper, cayenne, black pepper, and garlic powder. The mixture is applied inside and out of the birds, which are then stuffed with onion quarters and left to marinate. After chilling for several hours, the chickens are slow-roasted in the oven until thoroughly cooked and tender, resulting in a deeply seasoned and juicy main course perfect for a gathering.

Spicy Chicken Rub

Ingredients

  • 4 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon white pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 onions, quartered
  • 2 whole chickens (4lbs. each)

Method

  1. Mix all the listed ingredients except for the onions and chicken in a small bowl and set this spice blend aside.
  2. Take the giblets out of the chickens and discard them.
  3. Wash the inside of each chicken and then dry it completely using paper towels.
  4. Cover the entire surface and cavity of each bird with the prepared spice mixture.
  5. Insert a quartered onion into the main cavity of each chicken.
  6. Put each prepared chicken into a resealable plastic bag or wrap it tightly in two layers of plastic wrap.
  7. Place the wrapped chickens in the refrigerator for a minimum of 4-6 hours, or ideally leave them overnight.
  8. Heat your oven to 250°F. Transfer the chickens to a roasting pan and cook without a cover for 5 hours, until the internal temperature reaches at least 180°F. Allow the chickens to rest for 10 minutes prior to slicing.
