These tasty rolls are filled with a mixture of cooked chicken, shredded Monterey Jack cheese, chopped green chillies, and spices. The filling is wrapped in layers of buttered phyllo dough, then baked until beautifully golden and crisp. Spicy Chicken Rolls

Ingredients

  • 2 cups chopped cooked chicken
  • 2 cups shredded monterey jack cheese (about 8 ounces)
  • 1/4 cup drained canned chopped green chili
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic powder
  • 8 sheets frozen phyllo dough, thawed
  • 3 tablespoons margarine or 3 tablespoons butter, melted

Method

  1. Set your oven to heat to 350°F.
  2. Combine the chopped chicken, shredded cheese, drained green chillies, chili powder, and garlic powder in a mixing bowl.
  3. Carefully unfold the phyllo dough.
  4. Take one sheet of dough, keeping the rest covered with plastic wrap to prevent drying.
  5. Use a pastry brush to apply melted margarine over the sheet.
  6. Layer three more sheets on top, brushing each one with margarine as you stack them.
  7. Slice the stack across its width to create two rectangles.
  8. Spoon roughly one cup of the chicken filling along the long edge of each rectangle.
  9. Tuck about 1 inch of the dough from each short end over the filling.
  10. Roll the dough up tightly from the long edge with the filling.
  11. Transfer each roll to a baking tray, ensuring the seam is facing down.
  12. Brush the tops of the rolls with more melted margarine.
  13. Assemble the remaining rolls using the rest of the dough sheets and chicken mixture.
  14. Bake in the oven for 20 minutes or until the pastry turns a golden colour.
  15. Cut each baked roll into four individual pieces.
