Spicy Chicken Quesadillas

Prepare a flavourful Mexican one dish meal with these spicy chicken quesadillas. The filling combines cubed chicken with jalapeños, sweet bell pepper, lime juice and Cajun seasoning, all topped with a blend of habanero and Monterey Jack pepper cheese. The assembled quesadillas are cooked until the tortillas are golden and the cheese is perfectly melted. This recipe yields four servings and is ready in about 30 minutes.

Spicy Chicken Quesadillas

Ingredients

  • 8 count flour tortillas
  • 1/2 lb chicken fillet
  • 1/4 lb three monterey jack pepper cheese (From Deli)
  • 1/4 lb habanero pepper cheese
  • 1 yellow sweet bell pepper
  • 2 jalapeno peppers
  • 1 lime
  • 1/8 teaspoon cajun seasoning
  • 1 tablespoon olive oil
  • salt
  • 1 pinch ground black pepper

Method

  1. Cut the chicken fillet into medium cubes and slice the jalapeño peppers into thin rings.
  2. Warm a skillet and add the olive oil, then place the chicken and jalapeño rings into the pan.
  3. Stir fry the chicken for about 10-12 minutes, stirring constantly to prevent burning.
  4. While the chicken cooks, slice the yellow sweet bell pepper into thin strips, then cut them in half and add to the pan.
  5. Squeeze the lime juice into the pan and add the Cajun seasoning, salt and a pinch of ground black pepper.
  6. Once the chicken is nearly cooked through, reduce the heat to a simmer.
  7. Shred the habanero pepper cheese over the chicken mixture in the pan.
  8. Place a separate medium skillet over a low heat and lay one flour tortilla in it, topping with slices of Monterey Jack pepper cheese to melt.
  9. Take the chicken filling off the heat.
  10. Spoon a generous amount of the chicken filling onto the tortilla, add another cheese slice and cover with a second tortilla.
  11. Use a spatula to press down on the quesadilla to flatten it slightly.
  12. Repeat the assembly and cooking process to make three more quesadillas.
