Spicy Chicken Quesadillas

This recipe came about from a happy kitchen accident, resulting in a deliciously spicy filling. It combines shredded chicken with tomatoes and green chillies, Monterey Jack cheese and green onions, all layered between flour tortillas and toasted until golden. The whole process takes just 15 minutes. It makes a satisfying meal but can easily be adapted into smaller appetiser portions.

Spicy Chicken Quesadillas

Ingredients

  • 1 (10 ounce) can chicken breasts, strained and shredded
  • 2 (10 ounce) cans tomatoes and green chilies (I prefer Rotel)
  • 2 cups monterey jack cheese, shredded
  • 1/4 cup green onion, sliced
  • 8 flour tortillas (burrito size)

Method

  1. Drain the tomatoes and green chillies thoroughly in a strainer to remove all liquid.
  2. Combine the shredded chicken, drained tomatoes, shredded cheese and sliced green onions in a bowl.
  3. Place four tortillas on your work surface. Divide the chicken mixture evenly among them, spreading it thinly to cover each tortilla completely. Place the remaining four tortillas on top to create four quesadillas.
  4. Cook each quesadilla in a non stick pan, toasting until lightly browned on both sides and the cheese has fully melted.
  5. Cut each cooked quesadilla into 4-6 pieces. Serve with accompaniments like sour cream, salsa or a fresh salad.
  6. For appetisers, use 16 smaller taco sized tortillas instead. Spread the mixture over eight of them, top with the other eight, and cut each into 4 pieces.
