Spicy Chicken Pizza

Ingredients

  • 1 lb chicken, diced
  • 1 cup sliced green onion
  • 3 garlic cloves, minced
  • 3 tablespoons vinegar
  • 3 tablespoons soy sauce
  • 1 tablespoon crushed red pepper flakes
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 cup monterey jack cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 pizza crust

Method

  1. Combine the sliced green onion, minced garlic, vinegar, soy sauce and crushed red pepper flakes to create a marinade.
  2. Add the diced chicken to the marinade, stir to coat, and leave it to stand for 30 minutes.
  3. Drain the chicken, reserving the leftover marinade liquid.
  4. Fry the marinated chicken pieces in a pan until fully cooked through.
  5. Mix the cornstarch into the reserved marinade until smooth.
  6. Pour the marinade mixture into the pan with the chicken and cook, stirring, until it thickens and bubbles, for about 2 minutes.
  7. If the mixture is too thick, stir in a little water to achieve a spreadable consistency.
  8. Spread the chicken mixture evenly over a 12 inch pizza crust. You can use a shop-bought base or prepare your own dough.
  9. For a crisper result, bake the empty crust in the oven for about 10 minutes before adding toppings.
  10. Scatter the shredded Monterey Jack and mozzarella cheeses over the chicken layer.
  11. Bake the assembled pizza at 400°F for 20 minutes.
  12. Once baked, you can garnish the pizza with extra sliced green onion before serving.
