Spicy Chicken Pasta
This Italian-inspired pasta bake combines cooked chicken and spaghetti with a creamy, gently spiced cheese sauce made from Velveeta, Rotel tomatoes and chilli powder. Prepared in a casserole dish, it is designed to be frozen and reheated later, making it an excellent option for meal planning. The recipe serves six to eight people and takes about 55 minutes in total to prepare and cook.
Ingredients
- 4 chicken breasts, cooked and chopped
- 4 garlic cloves, minced
- 10 ounces spaghetti, cooked in chicken broth
- 2 teaspoons chili powder
- 1 cup chicken broth
- 1/2 cup butter
- 1 (10 ounce) can rotel
- 1/2 cup chopped onion
- 1/2 lb Velveeta cheese, cubed
Method
- Cook the chopped onion and minced garlic in the butter.
- Stir in the chilli powder, chicken broth, rotel and cubed cheese.
- Continue cooking, stirring often, until the cheese has fully melted.
- Mix in the cooked, chopped chicken and the spaghetti prepared in broth.
- Transfer the combined mixture into a large casserole dish.
- Cover the dish and place it in the freezer for later use.
- When ready to cook, allow the dish to thaw completely.
- Bake the covered casserole at 350 for 30 – 40 minutes until it is hot and bubbling.
