Ingredients
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper
- salt (to taste)
- 1 lb chicken tenderloins or 1 lb turkey tenderloins
- 2 teaspoons olive oil
- 1/4 cup freshly squeezed lime juice
- 2 teaspoons olive oil
- 1/3 cup sweet onion, chopped
- 1 jalapeno pepper, seeded and minced
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (8 3/4 ounce) can corn, drained
- 1/3 cup chopped tomato
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- 2 tablespoons fresh cilantro, chopped (plus extra for garnish)
- 1 lime, cut in quarters
Method
- Prepare the spice rub for the tenderloins by mixing the chilli powder, cumin, cayenne pepper, and salt in a small bowl, then sprinkle this over the poultry.
- Heat 2 teaspoons of olive oil in a medium nonstick skillet and brown the tenderloins for 3 to 4 minutes on each side.
- Pour in the lime juice, cover the skillet, and reduce the heat to low. Continue cooking for 8 to 10 minutes, until the meat is no longer pink inside and a food thermometer reads 165 degrees F.
- For the salsa, heat another 2 teaspoons of olive oil in a separate medium nonstick skillet. Cook the chopped onion and minced jalapeno for 2 to 3 minutes until the onion softens.
- Stir in the rinsed black beans, drained corn, chopped tomato, the remaining chilli powder and cumin, and the chopped coriander. Heat the mixture for 5 to 10 minutes until thoroughly warm.
- To serve, squeeze a quarter of a lime over each portion and garnish with extra coriander sprigs.
