Spicy Chicken or Turkey Tenderloins with Black Bean Salsa

Ingredients

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • salt (to taste)
  • 1 lb chicken tenderloins or 1 lb turkey tenderloins
  • 2 teaspoons olive oil
  • 1/4 cup freshly squeezed lime juice
  • 2 teaspoons olive oil
  • 1/3 cup sweet onion, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (8 3/4 ounce) can corn, drained
  • 1/3 cup chopped tomato
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 tablespoons fresh cilantro, chopped (plus extra for garnish)
  • 1 lime, cut in quarters

Method

  1. Prepare the spice rub for the tenderloins by mixing the chilli powder, cumin, cayenne pepper, and salt in a small bowl, then sprinkle this over the poultry.
  2. Heat 2 teaspoons of olive oil in a medium nonstick skillet and brown the tenderloins for 3 to 4 minutes on each side.
  3. Pour in the lime juice, cover the skillet, and reduce the heat to low. Continue cooking for 8 to 10 minutes, until the meat is no longer pink inside and a food thermometer reads 165 degrees F.
  4. For the salsa, heat another 2 teaspoons of olive oil in a separate medium nonstick skillet. Cook the chopped onion and minced jalapeno for 2 to 3 minutes until the onion softens.
  5. Stir in the rinsed black beans, drained corn, chopped tomato, the remaining chilli powder and cumin, and the chopped coriander. Heat the mixture for 5 to 10 minutes until thoroughly warm.
  6. To serve, squeeze a quarter of a lime over each portion and garnish with extra coriander sprigs.
