Spicy Chicken Meal Prep with Rice and Beans
This Mexican-inspired dinner is designed for meal preparation. Spiced chicken breasts are cooked with rice and tomatoes in a single pot. The dish is finished with black beans, fresh cilantro, and a vibrant sauce. It yields four servings and can be ready in about 20 minutes, making it ideal for planning healthy meals ahead.
Ingredients
- 1 cup long grain white rice (quinoa also works – see notes)
- 1 cup water
- 14 ounces of fresh salsa (undrained canned tomatoes also work)
- 1/2 teaspoon salt
- 1 teaspoon oil
- about 1 lb. chicken breasts, cut into 4-6 smallish pieces
- lots of spices like cumin, chili powder, garlic powder, and cayenne (taco seasoning also works)
- 1 14-ounce can black beans, rinsed and drained
- a handful of chopped fresh cilantro
- sunshine sauce (click for recipe)
Method
- Combine the rice, water, tomatoes, salt, and oil in your cooking pot and stir them together.
- Arrange the chicken pieces on top of the rice mixture and coat them liberally with your chosen spices and a little salt.
- Set the instant pot to cook on high pressure for 7-8 minutes.
- Once cooking is complete, carefully release the steam using the quick release valve.
- Take the cooked chicken out of the pot and set it aside.
- Stir the rinsed black beans into the rice, adding a bit of the sunshine sauce if you like.
- Portion the rice and bean mixture into four to six separate containers for meal prep.
- Place a piece of chicken on top of each portion.
- Finish each container with a sprinkle of chopped cilantro and a generous drizzle of the sauce.
