This hearty one-pan dish combines chicken and kielbasa with rice, cooked in a spiced tomato and chicken broth. Spicy Chicken, Kielbasa and Rice With Red Bell Peppers

Ingredients

  • 4 -6 tablespoons olive oil
  • 2 lbs boneless chicken thighs (cut into about 1-inch pieces)
  • seasoning salt
  • pepper
  • 1/2 lb dried kielbasa, sliced (or to taste)
  • 3 large red bell peppers, seeded and chopped
  • 2 medium onions, chopped
  • 3 tablespoons chopped fresh garlic (or to taste)
  • 1 tablespoon dried oregano
  • 1 1/2 tablespoons paprika
  • 1 teaspoon cayenne pepper (or to taste)
  • 1 1/2 cups uncooked converted white rice (I use Uncle Ben's)
  • 2 cups chicken broth (more if needed)
  • 2/3 cup tomato sauce
  • 3 teaspoons louisianna hot sauce (or to taste, opt)
  • 2 cups frozen peas, thawed (can use less)

Method

  1. Warm the olive oil in a large, heavy skillet.
  2. Coat the chicken pieces with seasoning salt and pepper, then brown them on all sides before transferring to a plate.
  3. Place the sliced kielbasa in the skillet and brown it lightly, then move it to the plate with the chicken.
  4. Cook the chopped onions, garlic, red bell peppers, oregano, paprika and cayenne pepper in the skillet for about 3 minutes.
  5. Return the browned chicken and sausage to the skillet and cook together for another 2 minutes.
  6. Stir the uncooked rice into the skillet, ensuring it is coated in the mixture.
  7. Pour in 2 cups of chicken broth, the tomato sauce and hot sauce, then mix everything, bring to a boil and cover the skillet.
  8. Lower the heat and let it simmer for about 25 minutes, until the rice is tender and the liquid is absorbed, adding more broth if needed.
  9. Fold the thawed peas into the skillet and cook for about 2 minutes until they are heated through.
  10. Adjust the seasoning with additional salt and pepper to taste.
