Spicy Chicken Kebabs
These vibrant kebabs offer a fresh and spicy taste the whole family will love preparing together. Chicken cubes are marinated in a zesty paste of garlic, ginger, orange and soy, then threaded with mushrooms, cherry tomatoes and red peppers. Grilled until golden, they make a perfect sharing platter for a buffet, lunch or supper. The recipe yields 20 skewers and takes about 45 minutes to prepare and cook, with extra marinating time recommended for deeper flavour.
Ingredients
- 3 garlic cloves roughly chopped
- knob of fresh ginger roughly chopped, plus extra to serve
- 1 orange grated zest and juice
- 3 spring onions roughly chopped
- 2 tbsp clear honey
- 1 tbsp light soy sauce
- 2 tbsp vegetable oil
- 4small skinless boneless chicken breast fillets cut into cubes
- 20 button mushrooms
- 20 cherry tomatoes
- 2large red peppers seeded and each cut into 10
Method
- Use a food processor to grind the garlic, ginger, orange zest and spring onions into a paste. Blend in the honey, orange juice, soy sauce and oil. Pour this mixture over the cubed chicken and allow it to marinate for at least 1 hr, or ideally overnight. Add the mushrooms to the marinade for the final 30 minutes so they absorb some flavour.
- Take 20 wooden skewers and thread on the chicken, tomatoes, mushrooms and peppers. Cook them on a griddle pan for 7-8 mins each side until the chicken is fully cooked and golden. Turn the kebabs often, basting occasionally with the leftover marinade. Once ready, place on a platter, sprinkle with chopped spring onion and serve for eating with your fingers.
