Spicy Chicken Kebabs

Ingredients

  • 3 garlic cloves roughly chopped
  • knob of fresh ginger roughly chopped, plus extra to serve
  • 1 orange grated zest and juice
  • 3 spring onions roughly chopped
  • 2 tbsp clear honey
  • 1 tbsp light soy sauce
  • 2 tbsp vegetable oil
  • 4small skinless boneless chicken breast fillets cut into cubes
  • 20 button mushrooms
  • 20 cherry tomatoes
  • 2large red peppers seeded and each cut into 10

Method

  1. Use a food processor to grind the garlic, ginger, orange zest and spring onions into a paste. Blend in the honey, orange juice, soy sauce and oil. Pour this mixture over the cubed chicken and allow it to marinate for at least 1 hr, or ideally overnight. Add the mushrooms to the marinade for the final 30 minutes so they absorb some flavour.
  2. Take 20 wooden skewers and thread on the chicken, tomatoes, mushrooms and peppers. Cook them on a griddle pan for 7-8 mins each side until the chicken is fully cooked and golden. Turn the kebabs often, basting occasionally with the leftover marinade. Once ready, place on a platter, sprinkle with chopped spring onion and serve for eating with your fingers.
