Spicy Chicken Jambalaya
This hearty one-dish meal combines chicken and sausage with a colourful mix of vegetables and spices. Simmered with rice in a rich tomato and broth base, it creates a satisfying and spicy main course. The recipe is designed to serve six to eight people and takes about 55 minutes from start to finish. You can adjust the heat level with the optional habanero peppers.
Ingredients
- 2 1/2 boneless skinless chicken breasts (cut into 1-inch cubes)
- salt and pepper, to taste
- 1/4 teaspoon creole seasoning
- 1 tablespoon vegetable oil (for browning meats)
- 5 links cooked sausage
- 1/4 cup yellow bell pepper, diced
- 1/4 cup red bell pepper, diced
- 1/4 cup onion, diced
- 1 teaspoon crushed red pepper flakes
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons chili powder
- 3 cups chicken broth
- 1 (14 1/2 ounce) can stewed tomatoes
- 1/4 cup zucchini (optional-as filler)
- 1/4 cup yellow squash (optional-as filler)
- 4 small habanero peppers
Method
- Cook the cubed chicken in hot oil in a skillet for 10 minutes until browned.
- Put in the sausage links and continue cooking until they are browned.
- Transfer the cooked meats to a Dutch oven.
- In the same skillet, cook the peppers, onion, zucchini, squash, garlic powder, crushed red pepper, chili powder and Creole seasoning until softened.
- Combine the vegetable mixture with the meat in the Dutch oven.
- Stir in the rice, chicken broth and the can of stewed tomatoes.
- Allow the mixture to reach a boil, then reduce the heat and let it simmer for 30 minutes.
- If you like, offer fresh lime wedges alongside each portion for serving.
