This satisfying one-dish meal combines chicken coated in blackening seasoning with a rich, creamy tomato sauce. Sliced mushrooms and garlic are sautéed before diced tomatoes, herbs, and cream are added to create the sauce. The dish is finished with Parmesan cheese, green onions, fresh spinach, and cooked mini penne pasta, all combined in the skillet. Spicy Chicken in a Creamy Tomato Sauce

Ingredients

  • 1 lb boneless skinless chicken breast, sliced in thin medallions (or dice small to stretch further)
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 tablespoon blackening seasoning (I prefer Paul Prudhomme redfish magic)
  • 4 ounces fresh mushrooms, sliced thin
  • 2 garlic cloves, sliced thin
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/2 teaspoon blackening seasoning
  • 1 pinch red pepper flakes
  • 1 teaspoon dried basil (or fresh if you prefer)
  • 2/3 cup heavy cream
  • 2 green onions, chopped
  • 1/3 cup grated parmesan cheese
  • 1/3 cup fresh spinach (leaves cut in half)
  • 3 cups mini penne pasta, cooked

Method

  1. Coat the chicken pieces thoroughly with the blackening seasoning.
  2. Warm one tablespoon of butter and one tablespoon of olive oil in a heavy skillet.
  3. Cook the seasoned chicken for 6-8 minutes until just done, then transfer it to a plate.
  4. Place the remaining tablespoon of butter and the sliced mushrooms into the same skillet.
  5. Sauté the mushrooms until they begin to brown, then add the garlic and cook for no more than 2 minutes, ensuring it does not burn.
  6. Stir in the canned diced tomatoes, dried basil, the half teaspoon of blackening seasoning, and the red pepper flakes.
  7. Allow this mixture to cook for 5-6 minutes until much of the liquid from the tomatoes has evaporated.
  8. Pour in the heavy cream, reduce the heat, and let it simmer for another 5-6 minutes. Taste and adjust the seasoning if required.
  9. Sprinkle the grated Parmesan cheese into the sauce and stir until melted, then mix in the chopped green onions.
  10. Return the cooked chicken to the skillet and let everything cook together for 5 more minutes.
  11. Add the cooked mini penne pasta and the fresh spinach, stirring to coat everything, and heat for 2 minutes until the pasta is warm.
  12. Serve immediately.
