Spicy Chicken Fritters
These quick spicy chicken fritters are an ideal snack or light lunch, ready in just 10 minutes. Minced chicken is combined with onion, spring onion, and red chilli for a kick, then bound with egg and seasoned. The mixture is deep-fried in spoonfuls until beautifully golden and crisp. They are traditionally drained and served warm with a cool cucumber mint dip for a delightful contrast.
Ingredients
- 300 g chicken breasts, minced
- 1 egg, beaten
- 2 tablespoons onions, finely chopped
- 1 tablespoon spring onion, finely chopped
- 1/2 tablespoon red chile, finely chopped
- 1 teaspoon salt
- 1/4 teaspoon pepper
- oil (for frying)
Method
- Combine the minced chicken with all the other listed ingredients in a mixing bowl.
- Stir the mixture thoroughly until it is fully combined.
- Pour oil into a suitable pan to reach a depth of approximately 2cm and begin to heat it.
- Carefully place small teaspoonfuls of the chicken mixture into the hot oil.
- Continue to deep fry the fritters for a few minutes until they turn a golden brown colour.
- Transfer the cooked fritters to a plate lined with paper towel to drain.
- Present the fritters accompanied by the cucumber mint dip.
