Spicy Chicken Dippers
These crispy chicken dippers are coated in crushed spicy tortilla chips for a flavourful crunch. The chicken strips are first dipped in seasoned flour and egg before being rolled in the crumbs and chilled. They are then pan-fried until golden and cooked through. Ideal for serving with salsa or a dip of your choice for a satisfying lunch or snack.
Ingredients
- 4 chicken breasts, cut in finger-width strips and halved length-wi necessary
- 9 -10 ounces spicy tortilla chips, the amount will depend on the size of the chicken breasts
- 3 tablespoons seasoned flour
- 2 eggs, beaten
- oil (for frying)
Method
- Place the tortilla chips into a plastic bag and crush them with a rolling pin to create coarse crumbs.
- Transfer the crushed chips to a shallow bowl.
- Coat each chicken strip first in the seasoned flour, then dip it into the beaten egg, and finally roll it in the tortilla chip crumbs.
- Place the coated chicken on a tray and chill for at least half an hour.
- Heat oil in a non-stick frying pan and cook the chicken dippers for a few minutes on each side until they are golden, crisp, and fully cooked.
- If cooking in batches, keep the finished dippers warm in an oven.
- Serve the hot chicken dippers with salsa or your preferred dip.
