This Indian chicken curry is a family favourite, combining tender chicken pieces with a rich coconut milk sauce. Potatoes and red bell pepper add texture, while curry powder, ginger and optional green chilli provide depth and heat. The dish is simmered until the sauce thickens beautifully. It is ideally served over hot steamed rice, with the seasoning adjusted to your personal taste. The recipe yields 4 to 6 servings.

Spicy Chicken Curry

Ingredients

  • 1/2 whole chicken, cut into pieces (breast)
  • 2 cups coconut milk
  • 2 cups water or 2 cups chicken broth
  • 2 tablespoons curry powder
  • 1 onion, diced
  • 3 tablespoons fresh ginger, cut into strips
  • 1 cup potato, cut into large cubes
  • 1 red bell pepper, cut into strips
  • 6 tablespoons fish sauce or 2 tablespoons salt and pepper
  • 1 green chili pepper (optional)

Method

  1. Place a pan over heat and add oil.
  2. Cook the diced onion and ginger strips until softened.
  3. Pour in the fish sauce.
  4. Introduce the chicken pieces, coconut milk, chicken broth and curry powder to the pan.
  5. Continue cooking for 15 min or until the chicken becomes tender.
  6. If you are not using fish sauce, season with salt and pepper at this stage.
  7. Mix in the strips of red bell pepper and the optional green chilli.
  8. Let the curry simmer gently for 3-5 minute.
  9. Allow the sauce to reduce and thicken to your liking.
  10. Serve the finished curry over hot rice.
