Spicy Chicken Couscous
This vibrant one-pot meal brings together tender chicken, fluffy couscous, sweet apricots and toasted almonds, all infused with a kick of hot curry paste. It's a speedy and flavourful Moroccan-inspired dish that's ideal for a light dinner or a satisfying lunch. With fresh coriander stirred through, it's a complete meal that comes together in just 30 minutes. Serve it with a dollop of plain yogurt for a cooling contrast if desired.
Ingredients
- 250g couscous
- 3 tbsp olive oil
- 1 chopped onion
- 2 large sliced skinless boneless chicken breast fillets
- 85g blanched almonds
- 1 tbsp hot curry paste
- 100g halved ready-to-eat apricots
- 120g pack fresh coriander
Method
- Cook the couscous following the packet directions, using a reduced salt chicken stock. Meanwhile, warm the olive oil in a pan and fry the chopped onion for 2-3 mins until it softens.
- Add the sliced chicken breast fillets to the pan and cook for 5-6 mins until tender. Stir in the blanched almonds and, once they turn golden, mix through the hot curry paste and cook for 1 min more.
- Tip the prepared couscous into the pan along with the halved apricots and the fresh coriander. Toss everything together until heated through, then serve. Plain yogurt makes a nice accompaniment.
