Spicy Chicken Chow Mein
This satisfying chow mein is a complete meal prepared in one pan. Vermicelli noodles are combined with strips of chicken breast, shredded cabbage, carrots, and green onions. The dish is flavoured with soy sauce, garlic, oyster sauce, and a kick of chilli oil for a spicy finish. It is a straightforward recipe that comes together quickly for a flavourful dinner.
Ingredients
- 8 ounces dry vermicelli
- 8 ounces skinless chicken breasts, cut into thin strips
- 2 tablespoons soy sauce, divided
- 1 large garlic clove, minced
- 1 tablespoon vegetable oil
- 2 cups packed shredded green cabbage
- 3 green onions with tops, thinly sliced on diagonal
- 1 medium carrot, coarsely shredded
- 1 tablespoon oyster sauce
- 1 teaspoon hot chili oil or 1 teaspoon sesame chili oil
Method
- Prepare the vermicelli according to the package instructions, leaving out any salt. Once cooked, drain the noodles, rinse them under cold water, and drain thoroughly. Toss the chicken strips with one tablespoon of soy sauce and the minced garlic.
- Place a large nonstick frying pan over high heat. Pour in one tablespoon of vegetable oil to coat the pan's surface.
- Add the coated chicken to the hot pan. Stir-fry for 2-3 minute until the chicken is lightly browned and cooked through. Incorporate the shredded cabbage, sliced green onions, and shredded carrot. Cook while stirring for 30 seconds. Add the drained vermicelli, oyster sauce, and the remaining one tablespoon of soy sauce. Continue to cook and stir for 2 minute until everything is heated through.
- Take the pan off the heat and stir in the chilli oil to finish.
