Spicy Chicken Burritos
These burritos combine seasoned chicken fried in bacon fat with melted Mexican cheese, crisp lettuce and a zesty sauce. The chicken is flavoured with a recommended fajita seasoning and the dish is assembled in warm tortillas for a satisfying meal. It yields enough for three to four people and takes about 50 minutes to prepare from start to finish.
Ingredients
- 1 lb chicken breast
- 1 (1 lb) packet bacon (use half)
- 2 -3 tablespoons fajita seasoning mix (Lisy's is the best (can buy at Wal-Mart)
- 1 (8 ounce) container mexican cheese (melting or crumbled)
- 1/8 cup ranch dressing
- 1 tablespoon sriracha sauce
- 1 (8 count) packet tortillas
- 2 cups lettuce
Method
- Cook the bacon in a frying pan, then remove it and set aside.
- In the same pan with the bacon fat, cook the chicken breast to infuse it with flavour.
- Warm the container of Mexican melting cheese until it is ready to use.
- Combine the ranch dressing with the sriracha sauce to create a spicy condiment.
- Wash the lettuce and then chop it into pieces suitable for filling.
- Assemble the cooked ingredients and sauces inside the tortillas to form the burritos.
