Spicy Chicken Breasts With Tahini-Yogurt Sauce

Ingredients

  • 1/4 cup olive oil
  • 1/2 teaspoon hot paprika
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 4 chicken breast halves, on the bone skin on
  • salt & freshly ground black pepper
  • 1/2 cup tahini
  • 1 cup plain yogurt
  • 1/4 cup fresh lemon juice
  • 1/4 cup cilantro, chopped
  • 2 tablespoons minced garlic
  • 1/4 cup honey
  • salt & freshly ground black pepper, to taste
  • cayenne, to taste

Method

  1. Set your oven to heat to 425 degrees.
  2. Combine two tablespoons of the olive oil with all the listed spices in a small dish. Place the chicken pieces in a mixing bowl, add the spice mixture and toss to coat. Season the chicken with salt and pepper. Pour the remaining two tablespoons of olive oil into an ovenproof skillet and place it over medium heat.
  3. Cook the chicken for 1½ to 2 minutes on the meatier side to brown it. Flip the pieces and brown the skin side for 3 to 4 minutes. Tip out any extra oil from the pan. Move the skillet to the preheated oven and roast the chicken for about 30 minutes, until it is cooked through. Serve the chicken with the prepared sauce.
  4. To make the Tahini-Yogurt Sauce, combine the tahini, plain yogurt, fresh lemon juice, chopped cilantro, minced garlic, and honey in a bowl.
  5. Season the sauce mixture with salt, pepper, and cayenne according to your taste. This sauce is best served at room temperature. Store any unused portion in the refrigerator, but it should be consumed within 24 hours.
