Spicy Chicken Bombs
These spicy chicken bombs are a flavourful snack or lunch option. Chicken breasts are pounded thin, filled with a cheese-stuffed jalapeno, then wrapped in bacon and baked or grilled. The result is a juicy, cheesy, and slightly spicy bite, finished with a barbecue sauce glaze. The recipe yields five substantial pieces, ready in about an hour.
Ingredients
- 5 chicken breasts, boneless, skinless
- 5 jalapenos, sliced in half lengthwise and cleaned
- 10 -20 slices bacon (depending on if you want to wrap it in 2 slices or 1)
- 4 ounces cream cheese, softened
- 1 cup cheddar cheese, shredded
- salt and pepper
- 1 cup barbecue sauce
Method
- Cut each chicken breast in half horizontally. Place the pieces between sheets of wax paper and pound them to a 1/4" thickness.
- Sprinkle the flattened chicken with salt and pepper.
- Combine the cream cheese and cheddar. Spread roughly 1 tablespoon of the mixture into each jalapeno half. Position a filled pepper, cheese side down, on a chicken piece and wrap the chicken around it securely.
- Encase each prepared chicken parcel entirely with bacon. Use two slices per piece, wrapping from one end to the middle and completing the cover with the second slice.
- Bake at 400 degrees for an initial 20 minutes, turning once. Brush with barbecue sauce and bake for a further 10-15 minutes.
- Alternatively, cook on a preheated 350 degree grill using indirect heat for 30 minutes or until the chicken is cooked through. Turn every 5 minutes, applying barbecue sauce each time.
