Spicy Chicken and Bok Choy Noodle Bowl

Ingredients

  • 3 tablespoons vegetable oil
  • 2 teaspoons crushed red pepper flakes
  • 4 garlic cloves, chopped
  • 2 inches gingerroot, peeled and cut into very thin matchsticks or grated
  • 2 cups shiitake mushroom caps, sliced
  • 1 medium bok choy, trimmed and cut into 3-inch pieces, then cut sticks lengthwise

  • 1 quart fat-free low-sodium chicken broth
  • 1 cup fat-free low-sodium chicken broth
  • 1 1/2 lbs chopped chicken
  • 1/2 lb vermicelli (thin spaghetti)
  • 4 scallions, cut into 3 inch pieces, then shredded lengthwise into thin sticks

Method

  1. Place a medium soup pot over heat. Pour in the vegetable oil, then add the crushed red pepper flakes, chopped garlic, ginger, sliced mushroom caps, and bok choy pieces. Season with salt and pepper.
  2. Pour in the quart and the additional cup of chicken broth. Cover the pot with a lid and bring the liquid to a boil.
  3. Add the chopped chicken and the vermicelli noodles to the boiling broth. Cook for 3 minutes.
  4. Stir in the shredded scallions and continue to cook for 2 minutes. Remove the pot from the heat and allow the soup to stand for 2 to 3 minutes more. Taste and adjust the seasoning with salt before serving.
