Spicy Chicken Bites

Ingredients

  • 1 1/2 cups canola oil
  • 1 lb chicken tenders, strips
  • 8 teaspoons hot sauce
  • 3 cups plain pancake mix
  • 1 1/4 cups water

Method

  1. Pour the canola oil into a pan, ensuring there is enough to fully submerge the chicken pieces.
  2. Slice the chicken tenders into small, bite-sized chunks.
  3. Put the chicken pieces into a bowl and add 2 teaspoons of hot sauce, tossing to coat evenly.
  4. Measure 1 cup of pancake mix into a separate bowl. In another bowl, combine the rest of the pancake mix with 6 teaspoons of hot sauce and the water, stirring to create a smooth batter.
  5. Coat each chicken piece first in the plain pancake mix, then dip it into the prepared batter.
  6. Carefully lower the battered chicken into the hot oil and fry until it is deeply browned all over.
  7. Transfer the cooked chicken to a paper towel-lined plate, season with salt, and serve.
