Spicy Chicken Bites
These spicy chicken bites are a fantastic snack or party food. Chicken pieces are tossed in hot sauce, then coated in a seasoned pancake batter and fried until golden and crisp. Ingredients
- 1 1/2 cups canola oil
- 1 lb chicken tenders, strips
- 8 teaspoons hot sauce
- 3 cups plain pancake mix
- 1 1/4 cups water

Method
- Pour the canola oil into a pan, ensuring there is enough to fully submerge the chicken pieces.
- Slice the chicken tenders into small, bite-sized chunks.
- Put the chicken pieces into a bowl and add 2 teaspoons of hot sauce, tossing to coat evenly.
- Measure 1 cup of pancake mix into a separate bowl. In another bowl, combine the rest of the pancake mix with 6 teaspoons of hot sauce and the water, stirring to create a smooth batter.
- Coat each chicken piece first in the plain pancake mix, then dip it into the prepared batter.
- Carefully lower the battered chicken into the hot oil and fry until it is deeply browned all over.
- Transfer the cooked chicken to a paper towel-lined plate, season with salt, and serve.
