Spicy Chicken and Avocado Wraps

This speedy wrap makes a perfect light meal. Thin slices of chicken breast are marinated with lime juice, chilli powder and chopped garlic, then quickly pan-fried. The warm, spiced chicken is piled onto seeded tortillas along with creamy avocado, slices of roasted red pepper and fresh coriander. It's a fresh, flavourful dish ideal for a casual lunch or simple supper, ready to eat in just 13 minutes.

Spicy Chicken and Avocado Wraps

Ingredients

  • 1 chicken breast (approx 180g), thinly sliced at an angle
  • generous squeeze juice 0.5 lime
  • 1/2 tsp mild chilli powder
  • 1 garlic clove chopped
  • 1 tsp olive oil
  • 2 seeded wraps
  • 1 avocado halved and stoned
  • 1 roasted red pepper from a jar, sliced
  • a few sprigs coriander chopped

Method

  1. Combine the sliced chicken with the lime juice, chilli powder and chopped garlic.
  2. Warm the olive oil in a non-stick frying pan and cook the chicken for a couple of mins, watching it closely as it cooks fast. At the same time, heat the wraps as directed on the packet or, for a gas hob, briefly hold them over the flame to get a light char, being careful not to let them dry out.
  3. Spread half an avocado onto each wrap. Place the pepper slices in the pan to heat them, then add the warmed peppers and cooked chicken to the wraps. Scatter the chopped coriander over the top, roll the wraps tightly, slice each in half and serve.
