Spicy Chicken and Potatoes
This one dish meal combines chicken and potatoes in a single pan for a convenient dinner. The chicken is first seared, then cooked with onions, garlic and potatoes in a broth and wine mixture. Seasonings like onion powder, garlic salt and cheyenne pepper add a gentle heat. It simmers until the potatoes are perfectly tender. This recipe makes four servings and takes about 50 minutes from start to finish.
Ingredients
- 2 large boneless skinless chicken breasts (cut in half)
- 5 -6 medium potatoes (cut in 1/2 thick slices, then halved)
- 1 large onion (chopped)
- 2 garlic cloves (pressed)
- 4 cups chicken stock
- 2 cups white wine (water can be used instead)
- 1 tablespoon olive oil
- 1/4 cup butter
- 1/8 teaspoon black pepper (for the chicken rub)
- 1 teaspoon onion powder
- 1 teaspoon garlic salt
- 1/4-1/2 teaspoon of cheyenne pepper
- 1/2 teaspoon black pepper

Method
- Trim any extra fat from the chicken and season it with 1/8 teaspoon black pepper and a little salt. In a large skillet, heat the olive oil and sear the chicken on both sides until golden. Take the chicken out of the pan.
- Melt the butter in the same pan. Cook the chopped onion until it turns translucent. Add the pressed garlic and cook for another minute or two. Put the potato pieces in, cover the pan, and cook for about ten minutes until the butter is mostly absorbed.
- Add the chicken stock and white wine to the pan, scraping up any bits from the bottom. Return the chicken to the skillet, placing it underneath the potatoes and onions.
- Scatter half of the onion powder, half of the garlic salt, half of the cheyenne pepper and half of the black pepper over everything. Bring the liquid to a boil, then lower the heat, cover, and simmer for 15 minutes, giving it a stir now and then.
- Turn the chicken pieces over. Sprinkle the rest of the seasonings over the dish and add salt according to your taste. Cover it again and cook for about 10 more minutes until the potatoes are soft. Pour in a little extra stock or water if the pan looks dry.
- Enjoy this dish on its own or with a fresh green salad.
