Spicy Chicken and Mango Stir Fry
This vibrant stir fry combines marinated chicken with sweet mango and crisp vegetables for a satisfying meal. The chicken is first soaked in a garlic and soy sauce mixture to absorb flavour before being quickly cooked with onions, broccoli, snow peas, and mango. Ingredients
- 1/4 cup soy sauce
- 2 garlic cloves, minced
- 3/4 lb boneless skinless chicken, sliced into 1/2 inch thick strips
- 1 tablespoon olive oil
- 2 medium onions, diced
- 1 cup frozen broccoli
- 1/2 cup frozen snow peas
- 1/2 cup frozen mango, sliced
- soy sauce, if needed
- 1 tablespoon coarsely chopped fresh cilantro
- 1 tablespoon chopped scallion
Method
- Mix the soy sauce and minced garlic together in a bowl or Pyrex dish.
- Add the sliced chicken to the marinade, cover the dish, and place it in the refrigerator for several hours or overnight.
- Warm the olive oil in a wok or large sauté pan. Cook the chicken, its marinade, and the diced onions together until the chicken is fully cooked.
- Introduce the frozen broccoli to the pan and cook for 3 to 4 minutes.
- Add the frozen snow peas and the sliced mango along with any juices, cooking for a further 2 to 3 minutes.
- Stir through the chopped cilantro and scallions before serving.
