Spicy Chicken and Mango Stir Fry

Ingredients

  • 1/4 cup soy sauce
  • 2 garlic cloves, minced
  • 3/4 lb boneless skinless chicken, sliced into 1/2 inch thick strips
  • 1 tablespoon olive oil
  • 2 medium onions, diced
  • 1 cup frozen broccoli
  • 1/2 cup frozen snow peas
  • 1/2 cup frozen mango, sliced
  • soy sauce, if needed
  • 1 tablespoon coarsely chopped fresh cilantro
  • 1 tablespoon chopped scallion

Method

  1. Mix the soy sauce and minced garlic together in a bowl or Pyrex dish.
  2. Add the sliced chicken to the marinade, cover the dish, and place it in the refrigerator for several hours or overnight.
