Spicy Chicken and Chips

Ingredients

  • 3 medium potatoes
  • 2 chicken breasts
  • frozen peas
  • margarine
  • cajun seasoning
  • creole seasoning
  • Worcestershire sauce

Method

  1. Peel the potatoes and cut them into thick chip shapes.
  2. Soak the cut potatoes in a bowl of salt water, storing them somewhere cool if leaving them for an extended period.
  3. Combine half a tablespoon of margarine, half a tablespoon of creole seasoning and a small pour of Worcestershire sauce in a small bowl to form a paste.
  4. Make a pocket between the skin and meat of each chicken breast and insert roughly half the paste, massaging it to distribute evenly. Place the breasts in a clay casserole dish.
  5. Drain the potatoes and place them in a baking tray with oil, then sprinkle liberally with cajun seasoning.
  6. Place both trays into an oven set to around 200 degrees and cook for approximately 40 minutes.
  7. About 5 minutes before serving, boil the peas, drain them and add a knob of margarine. Serve the peas alongside the chicken and chips with ketchup and mayonnaise.
  8. For a milder version suitable for children, omit the seasoning from the chips and use less of the spice paste for the chicken.
