This flavourful bake is perfect for a weeknight meal, transforming leftover cooked chicken into a hearty Mexican-style casserole. Layers of flour tortillas are topped with a creamy chicken mixture, seasoned black beans, salsa and melted mozzarella. It bakes until golden and bubbly for a comforting family dinner. The recipe serves eight and takes about 50 minutes from start to finish.

Spicy Chicken and Black Bean Bake

Ingredients

  • 2 cups shredded cooked chicken
  • 1 large red bell pepper, diced
  • 0.5 red onion, diced
  • 0.5 cup sour cream
  • 0.5 cup jalapeno-flavored cream cheese
  • 1 teaspoon taco seasoning mix
  • 0.5 teaspoon salt
  • 1 (14 ounce) can black beans, rinsed and drained
  • 0.25 cup hot water
  • 1 tablespoon ground cumin
  • 6 flour tortillas
  • 1 (16 ounce) jar salsa, or to taste
  • 0.5 cup shredded mozzarella cheese

Method

  1. Set your oven to 350 degrees F (175 degrees C) to preheat.
  2. In a large bowl, combine the shredded chicken, diced red bell pepper, red onion, sour cream, jalapeno-flavoured cream cheese, taco seasoning mix and salt. In another bowl, mix the rinsed black beans with the hot water and ground cumin, then mash roughly with a fork.
  3. Place three flour tortillas to cover the base of a 9x9-inch baking dish. Spread half of the salsa over them, followed by half of the mashed black bean mixture and half of the chicken mixture. Repeat the layers with the remaining ingredients, finishing with the last of the chicken mixture. Scatter the shredded mozzarella cheese over the top.
  4. Place the dish in the preheated oven and bake for 30 to 35 minutes, until the top turns golden. Allow it to stand for 5 minutes before you serve.
