This dish features chicken thighs baked in a sticky, aromatic glaze. The sauce is made from apple cherry juice concentrate, honey, and a blend of spices including cinnamon, red pepper flakes, and allspice. Dried cherries are added to the finished sauce for extra bursts of fruity flavour. It results in tender, glazed chicken perfect for a comforting dinner.

Spicy Cherry Glazed Chicken

Ingredients

  • 1 tablespoon vegetable oil or 1 tablespoon olive oil
  • 6 skinless chicken thighs (I would use breasts)
  • 3/4 cup frozen apple cherry juice concentrate
  • 1/4 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon, ground
  • 1/2 teaspoon red pepper flakes, crushed
  • 1/4 teaspoon allspice, ground
  • 1/2 cup dried cherries
  • 1/2 cup water
  • 2 teaspoons cornstarch

Method

  1. Coat the bottom of a 13x9 inch baking pan with the oil.
  2. Place the chicken thighs in the prepared pan. In a small saucepan, mix together the apple cherry juice concentrate, honey, salt, cinnamon, red pepper flakes and allspice.
  3. Heat the sauce mixture until it just begins to boil. Take out 1/2 cup of the sauce and set it aside. Pour the rest of the sauce over the chicken in the pan.
  4. Bake the chicken at 350 for 40 to 50 minutes, turning it once during cooking, until it is fully cooked. Transfer the chicken to a serving dish and keep it warm.
  5. Combine the drippings from the baking pan with the reserved sauce. Stir in the dried cherries, water and cornstarch.
  6. Bring this mixture to a boil and cook for 1 to 2 minutes, stirring often, until the sauce thickens.
  7. Pour the thickened sauce over the chicken to serve.
