Spicy Cheesy Sausage Breakfast Casserole
This hearty breakfast bake is ideal for special occasions or relaxed weekend mornings. It features spicy pork sausage, mushrooms, green chillies, and sharp cheddar cheese layered with bread cubes and a seasoned egg custard. You can assemble the entire dish a day in advance and refrigerate it, then simply bake it the next day. It serves a crowd and is ready in about 80 minutes total.
Ingredients
- 8 slices white bread, crusts removed and cut into cubes
- 1 lb spicy pork sausage, crumbled and cooked (Italian, bulk, or Jimmy Dean)
- 1 cup sliced mushrooms
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 (4 ounce) can mild green chilies, drained
- 1 1/2 cups grated sharp cheddar cheese
- 10 large eggs
- 2 cups milk
- 2 tablespoons chopped sun-dried tomatoes
- 1 tablespoon minced fresh basil
- 1/4 teaspoon ground sage
- 2 teaspoons dry mustard
- 1 teaspoon salt
- pepper, to taste (anywhere between 3 dashes to 1/4 teaspoon)
- 2 dashes Tabasco sauce, to taste

Method
- Brown the crumbled sausage in a pan until cooked through, then set it aside.
- Using the same pan, cook the sliced mushrooms, chopped onion, minced garlic, and drained green chillies until softened.
- Mix the cooked sausage with the sautéed mushroom mixture and allow it to cool.
- Lightly grease a 9x13-inch glass dish. Place the cubed bread in the bottom, then layer the sausage mixture on top, followed by the grated cheddar cheese.
- Whisk the eggs with the milk, sun-dried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco sauce. Pour this mixture evenly over the layers in the baking dish.
- You can cover the dish and refrigerate it overnight at this stage. Before baking, take it out of the fridge and let it sit for 30 minutes.
- Heat your oven to 350 degrees F.
- Bake the uncovered casserole for about 50 to 60 minutes, until it is golden, puffed, and set in the centre.
- Slice into portions and serve warm.
- For extra heat, sauté a chopped jalapeno with the onions. You may also use O'Brien potatoes instead of bread or a vegetarian sausage alternative.
