Spicy Cheesy Refried Beans
This rich and creamy Mexican side dish transforms a can of spicy refried beans into something special. Onion and garlic are sautéed before being combined with the beans and cream cheese, then the mixture is topped with Cheddar and baked until golden and bubbling. It's a wonderfully indulgent and flavourful accompaniment, ideal for serving alongside tacos or other Mexican-inspired meals. The recipe yields six servings and takes just 40 minutes from start to finish.
Ingredients
- 1 tablespoon butter
- 0.25 cup chopped onion
- 1 tablespoon chopped garlic
- 1 (16 ounce) can spicy fat-free refried beans
- 1 (4 ounce) package cream cheese
- 1 cup shredded Cheddar cheese
Method
- Set your oven to heat to 350 degrees F (175 degrees C).
- Place the butter in a saucepan to melt, then add the chopped onion and garlic, cooking them for 2 to 3 minutes until the onion softens.
- Mix the refried beans into the onion pan and cook for 3 to 5 minutes until hot. Take off the heat and blend in the cream cheese. Transfer this blend to a pie plate and scatter the Cheddar cheese over the top.
- Place the dish in your preheated oven and bake for about 20 minutes, until the cheese has melted and is bubbling.
