Spicy & Cheesy Quesadilla Burgers
This inventive recipe combines two favourite foods into one delicious meal. Thin, spiced beef patties are fried until cooked through. They are then layered with shredded cheese, well-drained pico de gallo and chopped pickled jalapenos between two large flour tortillas. Each assembled quesadilla is fried until the tortillas are golden and the cheese has melted completely. Serve them hot, cut in half, with a dollop of sour cream for a satisfying and unique lunch or snack.
Ingredients
- 1 lb lean ground beef
- 1/8-1/4 teaspoon ground red pepper
- 1/4 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon Mexican oregano
- 1 teaspoon adobo seasoning or 3/4 teaspoon salt
- 8 (10 inch) flour tortillas
- 1 1/2 cups chihuahua cheese, shredded
- 1/2 cup pico de gallo or 1/2 cup chunky salsa, very well-drained
- 1/4 cup pickled jalapeno pepper, finely chopped
- olive oil, for frying burgers and brushing tortillas
- sour cream, as desired
Method
- Use your hands to mix the lean ground beef with all the listed spices, from ground red pepper to the adobo seasoning or salt.
- Split the seasoned meat into four equal portions and shape them into very thin, flat and round burger patties.
- Add a little olive oil to a skillet and heat it. Cook each patty for 5-10 minutes, turning it once, until it reaches your preferred level of doneness. You could also grill or broil them. Set the cooked patties aside and keep them warm.
- Clean the skillet and return it to the heat. Lightly brush one side of every flour tortilla with olive oil.
- Place one tortilla in the hot skillet with its oiled side facing down. Sprinkle 3 tablespoons of shredded cheese over it, keeping a border clear.
- Spoon 2 tablespoons of the well-drained pico de gallo or chunky salsa over the cheese, then place one burger patty on top.
- Scatter 1 tablespoon of finely chopped pickled jalapeno over the burger, followed by another 3 tablespoons of cheese.
- Cover the stack with a second tortilla, ensuring its oiled side is facing upwards.
- Fry the quesadilla until the bottom tortilla turns a golden brown and the cheese inside melts, which should take about 1-2 minutes.
- Carefully flip the quesadilla over and cook the other side for a further 1-2 minutes until it is also browned and crisp.
- Repeat the entire assembly and cooking process from step 5 to make the remaining three quesadilla burgers.
- Slice each cooked quesadilla in half and serve immediately. Offer sour cream on the side.
