Spicy Cheesy Corn Casserole
This casserole highlights the fresh flavour of frozen corn, combined with a creamy, spiced cheese sauce. It is topped with a golden crumb crust for a satisfying texture. The recipe serves four people and takes about 55 minutes to prepare and bake.
Ingredients
- 1 (10 ounce) package frozen corn
- 2 tablespoons butter
- 1 shallot, chopped
- 2 tablespoons flour
- 1/2 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon dry mustard
- 3/4 cup milk
- 1 cup sharp cheddar cheese, grated
- 1 large egg
- 1/4 cup cracker crumb
- 1 tablespoon butter, melted
Method
- Preheat your oven to 350 degrees.
- Combine the melted 1 tablespoon of butter with the cracker crumbs and set this mixture aside.
- In a skillet, melt the 2 tablespoons of butter. Cook the chopped shallot for 5 minutes. Mix in the flour and all the spices. Slowly pour in the milk while stirring, and continue to stir until the mixture becomes thick and bubbly.
- Stir in the grated cheddar cheese until it has melted. Add the package of frozen corn and the egg, mixing everything thoroughly.
- Transfer the mixture into a greased 2-quart casserole dish. Sprinkle the reserved crumb mixture evenly over the top.
- Place the casserole in the oven and bake for 35 minutes.
