Spicy Cheeseburger Soup
This robust soup captures the essence of a classic cheeseburger in a comforting bowl. It combines ground beef with potatoes, carrots, and a blend of vegetables, all simmered in a creamy, cheesy broth. The addition of jalapeno and cayenne pepper provides a pleasant warmth. Ready in about 40 minutes, it yields a satisfying meal for 6 to 9 people.
Ingredients
- 1 1/2 cups water
- 2 cups cut potatoes (skin optional)
- 2 small carrots (optional)
- 1 small onion
- 1/4 cup chopped green pepper
- 1 jalapeno pepper
- 1 garlic clove
- 1 (8 ounce) can Rotel Tomatoes
- 1 tablespoon beef bouillon
- 1 lb ground beef
- 3 tablespoons flour
- 2 1/2 cups milk
- 8 ounces Velveeta cheese
- 1 teaspoon cayenne pepper
Method
- Cook the onion, green pepper, jalapeno pepper and garlic in a minimal amount of oil.
- Introduce the ground beef to the pan and continue cooking until it is fully browned.
- Remove any excess fat from the pan by draining it off.
- Pour in the water, then add the potatoes, optional carrots, rotel tomatoes, and beef bouillon. Bring the mixture to a boil, then cover the pan and let it simmer for 15-20 min or until the potatoes become tender.
- Stir 2 cups of milk into the soup.
- Combine the flour with the remaining.5 cup of milk until no lumps remain. Pour this mixture into the soup along with the Velveeta cheese.
- Continue cooking until the soup is smooth and has thickened. Mix in the cayenne pepper. The soup is now ready to serve.
- For a milder version, use mild rotel tomatoes and omit the cayenne pepper. it remains delicious.
