Spicy Cheese Wafers
These savoury, crisp cheese wafers are a flavourful homemade snack. The dough combines mascarpone, cheddar and parmesan cheeses with whole wheat flour, puffed rice cereal and a hint of cayenne and chilli powder. After chilling, the logs are sliced thinly and baked until golden and dry, resulting in a rich, crunchy bite. Perfect for lunchboxes or entertaining, the recipe yields approximately 45 pieces.
Ingredients
- 4 ounces mascarpone cheese (125 grams)
- 2 cups cheddar cheese, coarsely grated
- 1/2 cup parmesan cheese, grated
- 1 egg white
- 1 cup whole wheat flour
- 1 cup Rice Krispies (sugarless, puffed rice cereal)
- 1/2 cup graham cracker crumbs, very finely ground
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon chili powder
Method
- Combine all the ingredients in a large mixing bowl. Use your fingers first to mix everything together evenly, then press and knead with the heel of your hand to bind the dry ingredients with the mascarpone and egg white. Continue for nearly 5 minutes, pressing down firmly to incorporate the puffed rice cereal completely.
- Divide the mixture into two equal portions. Form each portion into a firm log measuring about 6 inches long. Wrap each log tightly in plastic cling film and place in the refrigerator for at least 4 hours.
- Heat your oven to 400°F. Prepare a baking sheet by lining it with a sheet of parchment paper.
- Take one roll of dough from the fridge. Using a sharp knife, slice the log into rounds that are 1/4-inch thick. Arrange the slices on the prepared baking sheet. Bake on the middle oven rack for 18-20 minutes. If needed, bake a second batch. Once baked, place both pans in the hot, turned-off oven, positioning one high and one low, and leave them inside for another 40 minutes to dry and crisp.
- Take the wafers out of the oven and let them cool fully. Keep them in an airtight container for storage.
