These homemade cheese sticks feature a soft dough made with sifted flour, baking powder and a hint of cayenne. Chilled shortening is cut in before cheddar cheese, minced onion, Worcestershire and Tabasco sauces are stirred through with buttermilk. After chilling, the dough is rolled, cut into sticks, brushed with butter, sprinkled with Parmesan and baked until lightly browned. They are best served immediately or cooled on a wire rack for storage. The recipe yields 24 sticks.

Spicy Cheese Sticks

Ingredients

  • 1 1/2 cups all-purpose flour, sifted
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt (optional)
  • 1/8 teaspoon cayenne pepper (to taste)
  • 1/3 cup vegetable shortening, chilled
  • 1 cup cheddar cheese, shredded
  • 3 tablespoons onions, minced
  • 1 tablespoon Worcestershire sauce
  • 3 -4 dashes Tabasco sauce (to taste)
  • 2/3 cup buttermilk
  • 2 tablespoons butter, melted
  • 1/4 cup parmesan cheese, fresh, grated

Method

  1. Sift the flour, baking powder, salt and cayenne pepper into a bowl. Incorporate the chilled shortening using a pastry blender until the mixture is even.
  2. Mix in the shredded cheddar cheese, minced onion, Worcestershire sauce and Tabasco sauce. Pour in the buttermilk and combine everything to form a soft dough.
  3. Encase the dough in wax paper or plastic wrap and refrigerate it for 1 hour.
  4. Heat your oven to 475°F.
  5. On a surface dusted with flour, roll the dough out into a rectangle measuring 8 by 12 inches. Carefully lift it onto a cold, lightly greased baking sheet using your rolling pin.
  6. Use a metal spatula to slice the dough in half lengthwise, then cut it crosswise at 1-inch intervals to create individual sticks.
  7. Coat the sticks with melted butter and dust them with the grated Parmesan cheese. Bake until they turn a light golden brown, which should take about 10 minutes.
  8. Take the sticks off the baking sheet straight away for serving hot. Alternatively, let them cool on wire racks before placing them in airtight containers.
