Spicy Cheese Shortbread
These savoury shortbread biscuits are flavoured with sharp cheddar cheese and a touch of cayenne pepper for a gentle heat. The dough comes together quickly with melted butter, then is rolled, cut, and baked until lightly golden. Perfect for serving as a snack or appetiser, this recipe yields about two dozen crisp, cheesy treats.
Ingredients
- 2 cups shredded sharp cheddar cheese
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon dry mustard
- 1/4 teaspoon ground cayenne pepper
- 1/2 cup butter, melted
Method
- Set your oven to heat to 375 F.
- Combine the shredded cheese, flour, dry mustard, and cayenne pepper in a bowl.
- Pour the melted butter into the dry mixture and stir it in.
- Use your hands to knead the mixture until it forms a cohesive dough.
- Should the dough seem overly dry, incorporate one tablespoon of water.
- Take half of the dough and roll it out on a floured surface to a thickness of 1/8- to 1/4-inch.
- Slice the rolled dough into square shapes.
- Transfer the squares to ungreased baking sheets and cook for 10 to 12 minutes, until the undersides are a light brown colour.
- Move the baked shortbread to a wire rack for cooling.
