Spicy Cheese Dip With Ground Beef
This hearty cheese dip is a crowd-pleasing appetiser. Lean ground beef is browned with onion before being combined with cubed Velveeta cheese and a can of tomatoes with green chillies. The mixture cooks in a slow cooker for 2 1/2 hours on LOW until perfectly melted and creamy. Serve it directly from the cooker with sturdy, scoop-shaped tortilla chips for dipping. A simple variation allows you to use garlic powder instead of fresh onion.
Ingredients
- 1 lb lean ground beef
- 1/4 cup onions, finely chopped or 3/4 teaspoon garlic powder
- 1/2 large onion, finely chopped
- 1 1/2 lbs Velveeta cheese, cubed
- 15 ounces rotel tomatoes with green chili peppers
- tortilla chips, scoop-shaped, for serving
Method
- In a large nonstick skillet, cook the ground beef and 1/4 cup of chopped onion until browned, breaking the meat apart as it cooks. Drain any excess fat.
- Transfer the cooked beef mixture into a slow cooker. Add the remaining chopped onion, the cubed Velveeta cheese, and the can of tomatoes with green chillies.
- Set the slow cooker to LOW and cook the dip for 2 1/2 hours, or until all the cheese has fully melted.
- Serve the finished dip warm directly from the slow cooker, accompanied by scoop-shaped tortilla chips for dipping.
- Tip: Cutting the Velveeta into smaller cubes will help it melt more quickly.
- Variation: You can substitute the 1/4 cup of onions with 3/4 teaspoon of garlic powder.
