Spicy Cheese Crisps
These savoury crisps are made from a simple dough of flour, cheddar cheese, and butter, seasoned with salt and cayenne pepper. The mixture is shaped into a log, chilled until firm, then sliced into rounds and baked. They emerge from the oven with golden edges, perfect for serving as a snack. The recipe yields approximately 40 individual crisps.
Ingredients
- 1 cup all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 8 ounces cheddar cheese, finely grated
- 1/2 cup butter, softened
Method
- In a medium bowl, combine the flour, salt and cayenne pepper by whisking them together. Mix in the grated cheese and softened butter. Use your hands to bring everything together into a cohesive dough.
- Place the dough onto a piece of waxed paper. Shape it into a log measuring 1 1/2" in diameter, then wrap it tightly in the paper. Chill in the refrigerator until firm, which should take about 2 hours.
- Heat your oven to 400 degrees. Cut the chilled dough log into slices that are 1/4" thick. Place the rounds on baking sheets, spacing them about 1" apart. Bake for 16-18 minutes, or until the edges turn a golden colour. Move the baked crisps to a rack to cool completely.
