Spicy Cheese Cookies
These savoury bites are named for their cookie-like preparation method, though they are decidedly not sweet. Featuring sharp cheddar and a touch of cayenne pepper, the dough is shaped into small balls, topped with a pecan half, and baked until set. They yield a generous batch perfect for sharing and require no special skills, just a simple mix of butter, cheese, flour, and spice. Allow them to cool fully after baking for the best texture.
Ingredients
- 1 cup butter or 1 cup margarine
- 8 ounces extra-sharp cheddar cheese, grated (Use orange for these, even if you normally buy white cheddar.)
- 2 cups flour
- 1/2 teaspoon cayenne (more to taste)
- pecan halves (You want pretty ones ( save the broken ones for something else.)
Method
- Set your oven to heat to 350°.
- Blend the butter or margarine with the grated cheddar cheese until creamy.
- Incorporate the flour and cayenne pepper, mixing until you have a uniform dough.
- Form the mixture into small balls, roughly the size of marbles, and arrange them on a baking tray without greasing it. They can be placed quite close together as they expand very little.
- Gently press a pecan half onto each ball of dough, flattening it to approximately 3/8 inch thick.
- Place in the oven to bake for 15 - 17 minutes.
- Let the cookies cool down entirely before serving.
