This recipe transforms tomatoes, apple, and onion into a sweet and spicy preserve. Simmered with sugars, vinegar, and cayenne pepper, it cooks down over several hours to achieve a rich, jammy texture. The result is a versatile condiment perfect for adding a flavourful kick to cheeses, sandwiches, or grilled meats. The process requires patience as the mixture slowly reduces to a dark, syrupy consistency before cooling.

Spicy Cayenne Tomato Jam

Ingredients

  • 4 pounds tomatoes, peeled and chopped
  • 1 large apple, peeled and chopped
  • 1 cup raw sugar
  • 1 yellow onion, diced
  • 0.5 cup brown sugar
  • 0.25 cup apple cider vinegar
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon ground cayenne pepper, or more to taste

Method

  1. Place the tomatoes, apple, raw sugar, onion, brown sugar, apple cider vinegar, lemon juice, salt, and cayenne pepper into a large pot and bring the contents to a boil. Lower the heat and allow it to simmer, giving it an occasional stir, until it becomes dark and syrupy, which will take about 2 hours 30 minutes. Keep simmering until it reaches a thick, jam-like texture, for approximately 30 minutes more.
  2. Take the pot off the heat and let the jam cool completely to room temperature, which may take 1 to 2 hours. Once cooled, spoon it into containers with lids and store them in the refrigerator.
