Ingredients
- 4 pounds tomatoes, peeled and chopped
- 1 large apple, peeled and chopped
- 1 cup raw sugar
- 1 yellow onion, diced
- 0.5 cup brown sugar
- 0.25 cup apple cider vinegar
- 3 tablespoons lemon juice
- 1 teaspoon salt
- 0.5 teaspoon ground cayenne pepper, or more to taste
Method
- Place the tomatoes, apple, raw sugar, onion, brown sugar, apple cider vinegar, lemon juice, salt, and cayenne pepper into a large pot and bring the contents to a boil. Lower the heat and allow it to simmer, giving it an occasional stir, until it becomes dark and syrupy, which will take about 2 hours 30 minutes. Keep simmering until it reaches a thick, jam-like texture, for approximately 30 minutes more.
- Take the pot off the heat and let the jam cool completely to room temperature, which may take 1 to 2 hours. Once cooled, spoon it into containers with lids and store them in the refrigerator.
