Spicy Cauliflower
This classic Punjabi side dish features cauliflower pieces cooked with aromatic spices like cumin, turmeric, and chilli flakes. The result is a deliciously spicy and healthy curry, rich in vitamin C, that comes together in under half an hour. It makes a perfect accompaniment for a larger Indian meal, serving up to eight people.
Ingredients
- 6 tbsp vegetable oil
- large piece ginger finely chopped
- 2 tsp chilli flakes
- 2 tbsp cumin seed
- 2 tsp turmeric
- 11/4 kg (after trimming and removing leaves) cauliflower broken into pieces
- small bunch coriander chopped
Method
- 1. Warm the oil in a large lidded pan or wok, then introduce the ginger and spices. Stir them for a few secs until fragrant. 2. Lower the heat, then add the cauliflower pieces and season. Cover with the lid and cook for 10 mins or until softened, giving it an occasional stir. 3. Finish by scattering the chopped coriander over the top before you serve.
